ABBI Holding’s goal in developing this ravioli was to create a product that would extend haute cuisine to the everyday table. This product blends king crab and caviar, encasing it in a very thin layer of vegetable gelatine, to protect it from the heat of cooking, thus allowing the sweetness of the crab to meet the deep, delicate flavours of the caviar. The judges described this as a “premium tasting” product that is “beautifully presented”.
